Bean & Salsa Soup

This meal is so simple, my three-year old could do it.  So he did.  I assisted with opening cans and operating the stove, but otherwise he did the entire thing.  Everyone had at least one serving and declared it "good." I always have all these ingredients on hand, and this can be prepared hours in advance or in about 15 minutes.

I tweaked the ingredients to make a more substantial soup.  And to negate my previous statement, for once in my life, I didn't have a can of black beans in the pantry, so I used two cans of white beans.  Next time, I'd like something with a little more texture in it: green or red onions, red pepper, or something else to give a little crunch.  Also, I'll probably do a few zaps with the immersion blender to make it thicker.

Ingredients
1 can (15 oz) black beans, drained & rinsed
1 can (15 oz) navy beans [or other white beans], drained & rinsed
2 cups frozen corn
1 jar (12 to 15 oz) salsa
1 can (small) sliced olives, drained & rinsed
2 cups water or broth [I did 1 cup of each]
1 teaspoon Southwest Seasoning [McCormick brand, or any related spices]
flour tortillas [optional]
garnishes (avocado, chives, shredded cheese, sour cream, hot sauce, etc.)

Directions
(1) Combine all ingredients except tortillas and garnishes in a soup pot or slow cooker
(2) Heat on the stove until simmering or in the slow cooker for 2 hours on low.
(3) If desired, cut tortillas into bite-size pieces and layer in individual bowls.  Garnish soup to taste.

Kid Participation: Everything.

Chicken, Black Bean, & Green Chile Skillet

I thought this was just going to be a run-of-the-mill, easy one-pot meal that we'd all eat and then forget about (unless I put it on here and filed it away for a weeknight clean-out-the-pantry type meal).  But my kids LOVED it.  Yes, worthy of capital letters.  *N* and *P* each asked for three helpings, and *J* asked for two (which is big, considering he's going through a picky phase right now).  The four of us polished off almost the entire thing, so I thought the leftovers would be a hearty lunch for me.  No luck, since at breakfast *N* asked if we were having the same thing for dinner again.  This sort of question is rare, and usually I'd assume it would be followed by a, "...because I don't want it!" (they are usually very leftover-averse).  But she actually asked to eat it again!  Well, knock me over with a can of black beans! (actually, don't, because that would hurt).  I felt especially vindicated because *J* said several times how gross it looked before actually tasting it.

I was going to poach the chicken but realized I had a better chance of getting the kids to eat it if I made it more interesting (because they are also meat-averse lately).  So I followed the basic steps for the lime chicken that is linked to in the original recipe.  I sliced up the chicken breasts into "tenders"-sized pieces, marinated them for about 15 minutes (all I had time for), and then browned them until cooked through in a separate skillet.  I do think it helped the flavor of the dish.
 
I eyeballed most of the ingredients, so the amounts I used aren't exact...it's an easy recipe to play with to suit personal tastes. Also, since I had no hot sauce in the house, I bought the Cholula brand used in the original recipe (sorry, Tabasco...I'm just not that into you). I assume it was good, though I used it sparingly since my kids aren't fans of hot-and-spicy things.
 
I served it with sour cream and salsa mix-ins, and green onions would've been a nice touch.  In the future, I may use this as a taco, burrito, or enchilada filling.
 
The only thing I didn't like was that the cheese congealed on top once it cooled, so maybe mixing it into the main dish before putting it in the oven - or just waiting until serving and sprinkling it on then - would work better.

Ingredients
2 to 3 cups cooked brown rice
2 Tablespoons extra virgin olive oil
1 cup white onion, finely chopped
3 garlic cloves, minced or pressed
2 cans (4 oz each) chopped green chiles
1 can (15 oz) black beans, drained and rinsed
1 teaspoon ground cumin
additional seasonings of choice [I used about 2 teaspoons Cajun seasoning mix]
1 to 2 Tablespoons lime juice
2 cups cooked, chopped chicken
1 teaspoon hot sauce
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
 
Directions
(1) Preheat oven to 350 degrees F.
(2) Heat oil in cast iron skillet over medium heat.  When hot, add onion.  Saute several minutes, stirring occasionally.
(3) Add garlic to skillet.  Cook another two minutes.
(4) Add rice, chiles, beans, cumin, seasonings, lime juice, chicken, and hot sauce.  Stir until thoroughly combined.
(5) Sprinkle cheeses on top.  Bake skillet about 15 minutes, or until cheese is melted.
 
Kid Participation: None, other than eating multiple portions.

Meatless Burritos

There wasn't anything spectacular about this meal: it was certainly perfectly "fine" and will surely be made again because I always have the ingredients on hand.  Everyone seemed to like it, although rolled tortillas stuffed with filling usually don't mix well with little kids.  Next time I'll probably serve it with Tostitos and let them dig in, scooping style.  Also, I think it needed a little more flavor, which is easily fixable with some garlic, smoked paprika, green chilis, cayenne, cumin (if you like that sort of thing, and I don't, so I avoid using it whenever possible), etc.
 
Ingredients
3 cans (15 oz each) black beans and/or red kidney beans, drained & rinsed
1 can (14.5 oz) diced tomatoes, undrained [I used petite cut]
1-1/2 cups salsa
1 cup corn [I used frozen]
1/2 large jalapeno, seeded & finely chopped
2 teaspoons chili powder
2 cloves garlic, minced
16 8- or 10-inch flour tortillas
* Optional Toppings:
shredded lettuce
shredded Mexican cheese blend
sour cream
cooked rice
green onions, sliced
 
Directions
(1) In 3.5-, 4-, or 5.5-quart slow cooker, combine beans, tomatoes, salsa, corn, jalapeno, chili powder, and garlic.
(2) Cover; cook on low 6-8 hours or high 3-4 hours.
(3) To serve, spoon bean mixture onto tortillas.  Top with desired toppings.  Roll.
 
Kid Participation:
* dump all ingredients into slow cooker
* activate slow cooker
* make a massacre of the meal and earn yourself a bath

Mexican-Style Brown Rice Casserole

Original Recipe: Weight Watchers (but tweaked)

This is an easy throw-together dish since I always have all the ingredients on hand. And if I don't, it's still forgiving and substitutions are easy.

The family all ate their servings of this dish (except *J*'s share of spinach). We just dug in with normal utensils, but this could also be served dip-style (scooped with chips) or perhaps even as filling for burritos or tacos.

Ingredients
4 cups cooked brown rice
1 cup salsa
1 teaspoon cumin [optional]
1 teaspoon garlic powder [optional]
2 oz reduced-fat cream cheese, softened [optional]
1 (15 oz) can refried beans [I used vegetarian, fat-free]
1 (10 oz) package frozen corn [I used 16 oz Trader Joe's roasted corn], thawed
1 (4 oz) can diced green chili peppers
1 Tablespoon chili powder [or to taste]
1 (10 oz) package frozen chopped spinach, thawed & well drained
3/4 cup shredded cheddar cheese

Directions
(1) Preheat oven to 375 degrees F. Grease a 2-quart or 9x13" baking dish.
(2) In medium bowl, combine rice, salsa, cumin, garlic powder, and cream cheese. Evenly spread half of mixture on bottom of baking dish.
(3) In another bowl, combine beans, corn, peppers, and chili powder. Evenly spread over rice in dish.
(4) Layer spinach over bean mixture.
(5) Sprinkle cheese over spinach.
(6) Evenly spread remaining rice mixture on top.
(7) Cover; bake 20-30 minutes or until heated through and cheese is melted.

Kid Participation:
* Combine various mixtures
* Spread mixtures (perhaps not so evenly)
* Sprinkle cheese

Mexican Pizza

I've made this recipe several times already, and each time the entire thing is devoured by my family.  It has the convenience of homemade pizza without the post-meal feeling of being weighed-down as one often does after consuming lots of salty sauce, bready crust, and greasy cheese.  Of course, you could easily transform this one to fit that bill.  But the fresh, raw vegetables and screw-with-your-head concept ("But I don't use half a jar of Prego?!") are enough to make me really look forward to making pizza again and know I don't have to anticipate a food coma tinged with regret.
 
Depending on what culture my pizza is supposed to originate from, I add particular seasonings to my crust.  My go-to crust is this one (though the original recipe for this one has its own crust recipe), and for this pizza I add a few shakes of garlic powder, chili powder, and smoked paprika.  I don't like cumin, but I'm sure it would work.  If a premade crust is being used, the same seasonings can be added to the "sauce" instead.
 
Ingredients (NOTE: all are approximations and can be tweaked for personal preference)
pizza crust
1 cup refried beans [I use vegetarian or fatfree]
1/2 cup salsa
2 cups shredded Mexican cheese blend [or cheese of choice]
toppings: shredded lettuce, sliced avocado, black beans, sliced green onion, chopped tomatoes, etc.
 
Directions
(1) Prepare pizza crust as desired.  It is suggested that the crust be prebaked for a few minutes.
(2) Thoroughly combine refried beans and salsa.  Spread over crust.
(3) Sprinkle cheese evenly over "sauce."
(4) Finish cooking pizza.
(5) Top with vegetables immediately, while cheese is still melty.  Gently press into pizza if necessary.
 
Kid Participation:
* Prepare pizza crust
* Whisk together beans and salsa
* Sprinkle cheese over crust (while you hover, making sure they don't touch the hot pan)
* Spread toppings (see "while you hover" instruction directly above)

Black Bean Spinach Pizza

Original Recipe Found in Taste of Home's 2006 Quick Cooking Annual Recipes

I love homemade pizza, but I worry my family gets tired of having it the same way every time.  This seemed like a somewhat healthy alternative version.

I didn't think the amount of beans would be enough, so I added another half-can of garbanzos.  In retrospect, there was too much bean-iness on the pizza, so I'll stick with the recommended one can next time.

Ingredients
pizza crust [I used this one]
1 can (15 oz) black beans, rinsed and drained
1/3 cup finely chopped onion
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon minced garlic
3/4 cup salsa
1/2 cup frozen chopped spinach, thawed and squeezed dry
1/2 teaspoon hot sauce [optional]
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded sharp cheddar cheese

Directions
(1) Preheat oven to 450 degrees.  Prepare pizza crust according to directions
(2) In small bowl, combine beans, onion, chili powder, cumin, and garlic.  Mash (I used a pastry cutter) until a spreadable consistency is reached.  Spread over crust.
(3) In another bowl, combine salsa, spinach, and hot sauce.  Layer over bean mixture.
(4) Sprinkle cheese over pizza.
(5) Bake 8-10 minutes or until golden brown.

Notes: More toppings, like chopped green onions or canned diced green chilis, would add more flavor.  So would using different types of cheese.  A different salsa, like a pineapple-based one, could be good.

Veggie Pizza Appetizers

This is a dish for which I pulled inspiration from several sources...several years ago.  It's a "make it up as you go to suit your own taste" kind of thing.  But it's always a hit at parties because people feel good about themselves for eating something loaded with vegetables.  It justifies going back for seconds (or fifths) of the queso dip or barbecue meatballs.  Using a variety of colorful vegetables - and chopping them very small so no one veggie dominates a particular slice of the pizza - draws attention to this appetizer.

Ingredients for "Sauce"
2 tubes crescent rolls
8 oz low-fat cream cheese [or to taste]
4 oz low-fat sour cream [or to taste]
bottled ranch dressing [or powdered ranch dressing mix]
1/4 cup salsa [optional]
grated parmesan [optional]
seasonings [garlic powder, salt, pepper, chili powder, cayenne, smoked
paprika etc.]

Ingredients for Toppings
green onions
broccoli
carrots
red onion
radishes
peppers [red, green, yellow, or orange]
shredded Mexican cheese [optional]

Directions
1) Put cream cheese in mixing bowl and allow to soften slightly.
2) Unroll crescent rolls and spread onto baking sheet.  Distribute as evenly as possible and seal all seams.
3) Bake crescent rolls according to package directions.  Remove from oven and allow to cool completely or until just slightly warm.
4) Add sour cream and ranch (and optional salsa) to cream cheese in several increments.  Mix thoroughly each time until desired consistency is reached (should be spreadable but not runny). 
5) Mix in optional parmsean and seasonings.  Evenly spread cheese mixture over crescent rolls.
6) Finely chop vegetables into smaller-than-bite-size pieces.  Toss together to mix well.
7) Scatter chopped vegetables over cheese mixture.  Top with shredded cheese (optional).  Gently press toppings to ensure they stay in place.
8) Cut pizza into pieces of desired size.  Refrigerate until serving.

Notes: None.

Kid Participation:
* Seal crescent roll seams
* Mix sauce ingredients together
* Spread sauce over crescent rolls
* Add toppings to pizza

Southwestern Black Bean Salad

I picked this as a last-minute addition to dinner because I needed a side dish.  It turned out to be tastier than the entree.  This was enthusiastically gobbled up by my husband, my 3-year old, and my 1-year old.  Since I was in a rush, I added the avocado along with everything else and didn't have time to refrigerate it for 30 minutes.  It still tasted great, and it was even better the next day after the dressing had had time to really permeate the vegetables.  See helpful information on how to cut an avocado without making a massacre of it here.

This is similar to my standard homemade salsa recipe: same ingredients as well as finely chopped mango and a few spoonfuls of store-bought pineapple or peach salsa, as well as some minced jalapeno and garlic if I want it spicy.

Ingredients
1 can (15.5 oz) black beans, rinsed and drained
9 oz frozen corn, thawed
1 tomato, chopped
1 small hass avocado, diced
1/4 cup chopped red onion
1 scallion, chopped
3 Tbsps lime juice [or juice of one lime]
2 Tbsp red wine vinegar
2 Tbsp extra virgin olive oil
1 tsp sugar
1 Tbsp cilantro [optional]
salt and pepper

Directions
1) Combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper in metal or ceramic bowl.
2) In separate bowl, whisk together lime juice, vinegar, olive oil, and sugar.
3) Add dressing to vegetables.  Marinate in refrigerator 30 minutes. Add avocado before serving.

Notes: None.

Kid Participation: Just mixing everything together.

Green Chili Chicken

This is one of those recipes for which I always have all the ingredients in the pantry, so it'll be a good "fall-back" recipe.  Like for those nights when I defrost some chicken because I don't know what else to do, then I'm scrambling an hour before dinnertime with what to do with it.

The original recipe called for flattening out regular chicken breasts - something I'm never good at.  I go at it with a mallet until the meat starts to fall apart, yet it's not thin enough to roll or fold.  And it can be tough on the outside but not cooked through to the inside.  So I went Plan B (see below) pretty early in making this, though I did flatten the chicken a bit to make for more even cooking.

Ingredients
3 to 4 chicken breasts
1 Tablespoon olive oil
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ground cumin
1/2 to 1 teaspoon salt
1/2 to 1 teaspoon pepper
2 4-ounce cans green chilis
2 ounces reduced-fat cream cheese [or sour cream]
1/4 cup salsa
1/2 to 1 cup shredded cheese, mexican blend

Directions
1) Preheat oven to 375.
2) Combine garlic powder, cumin, salt, and pepper in a shallow dish.
3) Pound chicken breasts to an even thickness.  Dredge each side in the spice mixture.
4) In medium-size pan, heat olive oil.  Add chicken and brown slightly on each side so spices adhere.  Remove from pan and put in greased baking dish.
5) Combine chilis, cream cheese, salsa, and shredded cheese in bowl.  Mix thoroughly, ensuring that cream cheese is blended.
6) Spoon sauce over chicken.  Cover and bake for approximately 30 minutes or until chicken is cooked through.

Notes: None.

* Pound chicken (if you trust them with a mallet)
* Stir spices
* Stir sauce ingredients together
