Quinoa Pilaf with Apples & Cranberries

I thought this was really good, though reactions from the rest of the family was split.  Since it was easy to make and held up well over several days, this will be a contender for something like Thanksgiving.  The apples, cranberry, and pecans give a autumnal vibe.
 
It made an insane amount of food: we ate it as a side for two dinners, plus it gave me several lunches.  Next time I'll cut the amount of quinoa in half (original amounts reflected below).
 
I don't often like nuts in any sort of recipe, but I'm glad I went against type and made the toasted pecans.  They added a nice balance to the other flavors.  I also added some finely-chopped sharp cheddar and gouda in the hopes that the addition of cheese would make the entire thing appeal to the kids.

Ingredients
1 cup white quinoa
1 & 1/2 cups red quinoa
4 cups vegetable or chicken broth
1/4 cup olive oil
1/2 one red onion, diced
2 stalks celery, diced
1 clove garlic, minced
1 & 1/2 teaspoons Herbes De Provence [I used Tuscan blend]
1 teaspoon Salt
pepper to taste
2 Granny Smith apples, diced
1/2 cup dry white wine
1 cup dried cranberries
1 cup pecans, toasted
1 cup sharp cheddar, diced [optional]
1 cup gouda, diced [optional]

Directions
(1) Rinse quinoa in a fine mesh colander; drain.
(2) In a medium saucepan over medium heat, combine quinoa and broth.  When it comes to a boil, cover and turn heat to medium low.  Simmer for about 10 to 15 minutes until quinoa is al dente.
(3) Meanwhile, in a saute pan over medium high, add olive oil, onions, celery and garlic; stir.
(4) Add herbs, salt and pepper. Saute until the onions and celery are translucent, about 8 minutes.
(5) Add apples and wine; simmer 5 minutes to cook out alcohol.(6) Pour onion mixture over cooked quinoa; stir until combined.
(7) Fold in cranberries, pecans, and cheese. Check for seasoning.

Cranberry & Bacon Chili

I love a good chili, but I don't gravitate towards those that require lots of ground beef or lots of kidney beans.  This recipe caught my eye because it involved neither, and the use of cranberries intrigued me.  Sweet, tart chili?  I was willing to take the chance on the unorthodox twist, since I've had chili with cinnamon and chocolate (aka, Cincinnati-style) and enjoyed it.
 
Luckily, this was a homerun instead of a bomb.  While I should still seek out an awesome traditional chili recipe (it seems like one of those basic dishes I should have in my arsenal), this one will go into rotation in our house.
 
The recipe is flexible: type of beans, type and amount of spices, additional vegetables (maybe some bell pepper and baby carrots?), etc.
 
Ingredients
6 slices of thick bacon, cut into 1/2″ pieces
1 yellow or white onion, diced
1 cup dried cranberries
1 can (14 oz) tomato puree
2 cups water
1 can (15 oz) kidney beans, rinsed & drained [I substituted Great Northern beans]
1 can (15 oz) pinto beans, rinsed & drained
1 to 2 tablespoons chili powder
1/2 tablespoon smoked paprika
1 tablespoon onion powder
1 tablespoon salt
1 tablespoon garlic powder
1/2 tablespoon cumin
1/2 tablespoon oregano
1/4 teaspoon cinnamon
garnishes [sour cream, green onion, shredded cheese, etc.]
 
Directions
(1) In a large pot, cook bacon over medium heat until crispy.  Set aside to drain on paper towel; leave several tablespoons of grease in pot.
(2) Add onion to pot; cook over medium-high heat until soft, about 4 minutes.
(3) Add cranberries to pot; cook 2-3 minutes.
(4) Add tomato puree, water, beans, spices, and cooked bacon to the pot.  Simmer on medium-low heat for at least 20 minutes.
(5) If desired, use an immersion blender (or regular blender) to lightly puree chili to reach desired thickness.
(6) Serve hot with garnishes.
 
Kid Participation: Add heaping helpings of cheese and sour cream; enjoy.

Cranberry & Apple Crisp

While I would happily have every dessert I ever make be chocolate-based, I know not everyone shares the same obsession.  So if it's not going to be full of my VIP ingredient of choice, I like to go in the opposite direction and include fruit: if it's not going to be obviously bad for you, why not pretend it's masquerading as something good for you?
 
Per the recipe, I used granny smith apples and found the final product to be too tart for my liking.  Next time I'll substitute some sweeter ones.  Also, because the apples were in the back of our fridge and went through an unfortunate freeze/thaw cycle, I had to throw out a few and use pears in their place.  I don't know how much of a difference they made; everything got mixed in together so I never identified a definite bite of apple or pear either way.
Ingredients
* For topping:
1 cup flour
1 cup old-fashioned oats
2/3 cup brown sugar
1/2 cup cold butter
* For fruit layer:
8 to 9 apples
2 cups cranberries (fresh or frozen) [I used fresh]
1-1/4 cups sugar
7 Tablespoons flour
1-1/2 teaspoons cinnamon
1 pinch nutmeg (optional)
7 Tablespoons cold butter, cut into pieces
 
Directions
(1) Preheat oven to 350 degrees.  Grease 9x13" baking pan (I used glass).
(2) Mix dry topping ingredients together until well combined.  Add cold butter; mix with fingers or pastry cutter until it resembles coarse meal.  Put in refrigerator while preparing fruit layer.
(3) Peel, core, and cut apples into 1/4" slices.
(4) In large bowl, mix apples, cranberries, sugar, flour, and cinnamon.  Add butter; toss to combine.  Transfer mixture to baking dish.
(5) Crumble topping over fruit.  Bake for about 1 hour, or until apples are desired tenderness.  Cover with foil after 30 minutes to prevent browning.
(6) Cool slightly and serve with ice cream or whipped cream.

* Crumble topping
* Expect to have whipped cream squirted into your mouths during the entire process

Cranberry & Horseradish Relish

This recipe was given to me by my brother with the title of "Mrs. Stamberg's Cranberry Relish."  I have no idea who that is, so my apologies for removing her name from the recipe here.  But I have no way of authenticating or verifying who this mystery woman is, so better safe than sorry.  Also, maybe someone will tack my name onto it from now on and pass it along, and I can take credit...  Would that technically be plagarism?

The original recipe said this makes 1.5 pints, but I didn't measure the final product.  Surprisingly, even my kids ate their portion of this.  And all the adults at Christmas dinner really liked it.  I was told that the horseradish "threatens to overpower the other flavors but backs off at the last second."  We served it with a spiral ham.
 
Ingredients
2 cups whole raw cranberries, washed
1 small onion
3/4 cup sour cream
1/2 cup sugar
1 to 2 tablespoons white horseradish from a jar [I used one]

Directions
(1) Grind the raw berries and onion together, preferably with a meat grinder ir food processor, until texture is still slightly crunchy and coarse.
(2) Add everything else and mix.  Put in a plastic container and freeze.
(3) Early on the morning of the day it will be served, move it from freezer to refrigerator compartment to thaw.  The relish will be thick, creamy, pink, and with some icy slivers left.

Kid Participation:
* Push buttons on food processor (or grinding meat grinder like in the Olden Days)
* Mix everything together

Slow Cooker Cranberry Chicken

A "seasonal" meal that adds a bit of autumn to your table - and is really easy to make.  I had trouble finding "whole berry cranberry sauce," but apparently half a bag of Craisins and 3/4 cup of water can be subsituted.  I usually add vegetables halfway through the cooking time so they retain a little of their crunch, but they can be added at the beginning with everything else and with no harm done.

I served this with brown rice because I was lazy.  Both kids ate what I gave them and asked for more.

Ingredients
3 skinless boneless chicken breasts
1 can (16 oz) whole berry cranberry sauce
1 cup barbecue sauce
1/2 onion, chopped
2 stalks celery, chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Directions
(1) Put chicken, cranberry sauce, barbecue sauce, salt, and ppper into slow cooker.  Cook on low for 7-8 hours or high for 3-4 hours (until chicken is cooked through).
(2) Halfway through cooking time, add onion and celery.

Notes: I may try it with Craisins and water next time because I always have Craisins in the pantry.

Cranberry Chicken Bake

This is a recipe from my mother that I enjoyed as a kid, so I was hoping my kids would like it, too. The copious amount of ketchup made me optimistic they'd fall in love, but the mere presence of onions and the tartnesss of the cranberries were potential dealbreakers. *J* ate most of his bowl but declared himself "none" (done) before his plate was clear. He didn't eat his green beans with mountains of powdered cheese, either, so I guess he just wasn't feeling food in general. *N* had three full servings, so *J* will face it again and we'll see if tonight was a fluke.

I served this over brown rice this time, but I've also done it with garlic mashed potatoes.
 
Ingredients
3 boneless, skinless chicken breasts
salt and pepper
½ cup packed brown sugar
½ - 1 cup chopped onion [to taste]
1 Tablespoon olive oil, divided
1 cup ketchup
1 ½ cups fresh cranberries [can use frozen or craisins]
½ teaspoon freshly grated orange peel or 1 teaspoon orange juice [optional]

Directions
1) Preheat oven to 375 degrees Fahrenheit.  Grease 9x13" baking dish.
1) Sprinkle both sides of each breast with salt and pepper (optional: cut each breast in half to speed up cooking time).
2) In small amount of olive oil, sautee chicken in pan on medium-high heat in until slightly browned.  Remove from pan and put in baking dish.
3) Add remaining olive oil to pan.  Sautee onion until crisp tender.
4) Add ketchup, brown sugar, and orange to onion.  Heat, stirring often, until sugar is dissolved.  Stir in cranberries until coated.
5) Pour sauce over chicken.  Bake for approximately 20 minutes, or until chicken is cooked through and cranberries begin to burst.
